Mexican Egg Salad Sandwich

Exactly how long do hardboiled eggs last anyway?

Well, if you're like me and still have some from Easter, or you know, are willing to boil eggs just because, well have I got a recipe for you.

First, gather these ingredients

6 Hardboiled eggs (peeled and chopped)
Finely diced shallot (the first time I made this, I used a sliced green onion)
1 T. chopped cilantro
2 T. (or less) mayonnaise
1/8 t. cumin
1/8 t. chili powder
1 avocado (peeled and chopped)

Mix together in that order and slap on some bread.

This is sooo good. Even the cilantro haters in the household ate it up.

  2. I love egg sandwiches in general, have a couple a week, AND we eat a lot of avocados, AND I usually also slice up some onion, so this is a win/win sandwich! Except for the cilantro, which I hate under any circumstances, no matter what it might be mixed with, even if you hid it in chocolate. Why? Because IT doesn't like me!

  4. i'm a sucker for egg salad, and i have a bunch of cilantro in the garden, which over-wintered in a cold frame and is now threatening to bolt if i don't use it up. i'll have to try this.
